Its name means "head of the shop" and ras el hanout is truly one of the world's great blends. In Morocco, this blend may contain as many as fifty ingredients, some of them powerful aphrodisiacs. Our mild-mannered version may have nutmeg, cinnamon, rosebuds, pepper, turmeric, ginger, allspice, cardamom, cloves, and lavender. Rub on lamb or poultry. Use in couscous and tagines (stews). |
